Chef's Corner - Cranberry Relish

One large orange quartered with no peel
1 pound of cranberries
1 1/2 cups white sugar
1 whole orange zest
1 (8 oz) can crushed pineapple, drained


First, zest orange.  Next, finely chop the orange in a food processor.  Then combine cranberries, orange zest and sugar in a heavy saucepan.  Cook and stir over medium heat until cranberries just begin to pop, about 10 minutes.  Finally, transfer cranberries to a bowl.  Stir in chopped orange and drained crushed pineapple.  Cover and refrigerate until well chilled.
