Not much was left of the restaurant, Grubsteakers, after an EF-4 tornado ripped through the Rochelle 9 months ago. But now, you can clearly see it’s making a comeback. The roof is up and wooden beams form the skeleton for soon-to-be-installed walls.
“It’s been about 8 months before we starting digging the ground. And that’s where we’re at right now,” says Grubsteakers owner, Ava Mirtoska.
It’s been a long journey for Mirtoska, who was left to wonder if she would ever get her restaurant back. But with the help of the community, she was able to raise nearly $20,000 dollars to begin rebuilding.
“On April 9th, it was a disaster, and at that time I was never believing it was going to happen again, that I can have Grubsteakers back. But that’s where it is now. We’re getting it back…and we’re going to be back to business,” she says.
Mirtoska adds that it’s the loyal customers who have been there for her from the start. She’s hopeful that Grubsteakers will have its grand re-opening very soon. And what she’s most excited about is enjoying the company of the very people who supported her.
“This coming spring, I hope I’m going to be back in business and see all of my customers and see everybody around here,” she says.
Mirtoska adds that the new Grubsteakers will be even better than the old one.
